Beef Stew - 1 Unit

Ingredients

1/2 lb. lean beef cut into 1/4-1/3" pieces
3 tbs olive oil
1/2 tsp salt
1/2 tsp pepper
3 cloves medium garlic, chopped fine
1 medium onion, chopped fine
2 tbs tomato paste
1 14 oz. can fat free beef broth
2 tbs red wine vinegar
2 cups potatoes, peeled and cut into 1/2" cubes
1 cup carrots, cut into small pieces
3 - 4 mushrooms, cut into small pieces
1/3 package frozen corn
1/3 package frozen peas

Directions

Heat 1 1/2 tbs of oil in large pot. Brown beef and set aside. Put 1 1/2 tbs of oil in pot. Add onion and garlic. Sautee for 3 or 4 minutes. Stir in tomato paste and browned beef into onion/garlic. Add beef broth, vinegar, potatoes, peas, corn, mushrooms, pepper and salt. Bring to boil, reduce heat and simmer for 2 hours. Thicken with corn starch about 1/2 hour before done.
