Pepper Steak with Rice

Ingredients

1 lb. lean beef steak, 1/2" thickness
2 tbsps margarine
Garlic powder
1 (10 oz.) can beef broth
1 cup sliced green onions, including tops
2 green peppers, cut into strips
2 tbsps cornstarch
1/4 cup water
1/4 cup soy sauce
2 large, fresh tomatoes (cut into wedges)

Directions

Cut meat into 1/4" wide strips. In a large skillet, brown meat in melted margarine. Add garlic powder and beef broth. Cover and simmer 20 minutes. Stir in onions and green peppers. Cover and simmer 15 minutes. Blend cornstarch, water and soy sauce. Stir into meat mixture. Cook and stir until thickened. Add tomatoes and stir until heated; serve over rice.
