Pineapple Grilled Flank Steak Marinade

Ingredients

1 cup unsweetened pineapple juice
1 cup crushed fresh pineapple
1/2 cup sliced red onion
1 tbsp soy sauce
1 tbsp red-wine vinegar
2 tbsp olive oil
1 lime, sliced
3 tbsp cilantro, chopped
2 cloves garlic, minced
2 tsp jalapeno pepper, minced
1 tbsp chili powder
1/2 cup beef broth
Tabasco sauce, to taste
Fresh Pineapple and onions for garnish

Directions

Marinate the flank steak for 2 hours. Remove steak and place on an oiled grill. Meanwhile, add 1/2 cup beef broth to the marinade and bring to a boil. If desired, add additional Tabasco, cilantro, and lime juice to taste. Slice steak across the grain and cover with the sauce. Garnish with grilled pineapple and onions.
