Tortellini Stew

Ingredients

2 tsps olive oil
8 oz. fresh mushrooms, sliced (3 cups)
1 medium onion, chopped (1 cup)
1 clove garlic, minced
2 medium tomatoes, chopped (2 cups)
1 1/2 cups water
1 - 8 oz. can no-salt added tomato sauce
8 oz.* thick and chunky salsa
2 tbsp snipped fresh basil leaves
1 1/2 tsps instant beef bullion granules
1/4 tsp fresh ground pepper
1 - 9 oz. pkg uncooked fresh cheese tortellini

Directions

Heat oil in 3 qt. saucepan over medium-high heat. Add mushroom, onion and garlic. Cook for 3 1/2 to 5 minutes, or until vegetables are tender, stirring frequently. Stir in remaining ingredients, except tortellini. Bring to a boil. Stir in tortellini. Cover. Reduce heat to medium-low. Simmer for 6 to 8 minutes, or until tortellini are tender, stirring occasionally. Sprinkle each serving with shredded fresh Parmesan cheese, if desired.

* I think it's "8 oz". Healthy Choice's recipe verbatim is "1/2 thick and chunky salsa". Half of what? I'm not sure. I think it means "1/2 of a 16 oz. jar of salsa", or 8 oz. It tastes good this way. You may add more or less salsa to suit your taste.
